Ingredients
- 2 cups glutinous sticky rice
- 1 cup coconut milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon salt
- Banana leaves (cut into 8×8 inch squares, cleaned, and lightly toasted over a flame for flexibility)
- Optional: 1 tablespoon sesame seeds or 1/4 cup black beans for added texture
Instructions
1. Soak 2 cups of glutinous sticky rice in water for 4 hours or overnight. Rinse until the water runs clear.
2. Steam the soaked rice for 20-25 minutes until tender.
3. Heat 1 cup coconut milk, 1/2 cup sugar, and 1/4 teaspoon salt in a pot until the sugar dissolves.
4. Mix the steamed rice with the coconut mixture and let it sit for 10 minutes.
5. Lightly toast banana leaves over a flame to make them pliable. Cut into 8×8 inch squares.
6. Place a portion of the rice mixture in the center of each banana leaf square. Fold tightly to form a packet and secure the edges.
7. Grill the packets over a campfire or portable grill for 5-7 minutes on each side until slightly charred.
